I've only ever dried via Epsom salt immersion so I'd say probably the dehydrator did it since they typically expell temps around 110° f which can degrade the psyolcybin, especially at 3 hours

All levels given for 30 minutes of heat exposure. Consider you exposed it for 3 hours around 50c (106ish f) 50c does show degradation of psyolcybin even in as little as 30 minutes

Doesn't matter if you did lemon tek as lemon juice pulls the psyolcybin (turning it into psylocin along the way) this small amount of liquid would almost instantly absorb into your guts mucus membrane.
If you eat whole shrooms or didn't soak them long enough the stomach acid levels will be much lower making it harder to digest the rough fibrous body and keeping the psyolcybin inaccessible in your tummy

No prollem. My guaranteed method is 2:1 Epsom salt:shroomw by weight. But you need to bake the Epsom salts first to make them as dry as possible and use the dried weight as your ratio not the out of the bag weight
