because it has been done before. some guy in the 60s fasted for over a year, just drinking water, taking vitamins and supplements and surviving off his own fat. he went from 456 pounds to 180 (and kept it off, something else fats insist is impossible).

Obesity was at 11%-13% in 1960. Candy bars became popular in like the 1920s, and cheap sugar started rearing its head by the late 19th century. McDonalds only had 200 places in 1960, but diners were popular and unhealthy.
You could roughly eat like a modern person in 1960, but the culture around eating and cooking just hadn't eroded that badly at that point.
