Honestly I think you do especially if you're fat. I went from 240 - 130lbs. I counted every calorie and did very light cardio, fat people perception of food is fundamentally different than normal weight people. I'm in the middle of bulking and eating a slight surplus now, I don't plan to count calories for the rest of my life and even now I'm more lax with it. But, to get to this point you need to be strict

yeah u can do that.

but it's pretty darn hard to overeat lean protein + veges, so u can get away with just rough portions tbh.

my previous coach did body building competitions and his strategy was diet composition, not counting calories. 3 mo before competition he would eat just steamed chicken and veges, with maybe a fistful of rice.
