Pangasius with fennel and potatoes

Boil the diced potatoes in saltwater for 5-8min (they shouldn't be done).

Dice fennel, throw it in a pan with oil and heat for a few minutes. Salt & pepper and some dried herb if you want (I used thyme).

Cut olives in halves (black ones work as well). Mix all three things in the pan, then throw everything into the baking dish.

Season the fish (salt, pepper, coriander leaves, lemon juice) put it on top of the stuff.

Into the oven for 30min at 180°C.

Fennel is the worst vegetable, do people actually like how they taste or is it forever destined to be a "texture enhancer".

Is there even a way to cook it and make it palatable, god forbid enjoyable?

I like the taste, so probably cannot help you with it. As I said I just throw it into a heated pan with oil and season it.

What about fennel seeds? Do you enjoy their taste? If not, then you're probably out of luck.

It tastes like water, but being fair, so do tomatoes, and I like those, so it's probably some deep trauma I have that needs addressing.
