Underrated cuisine thread

My Top 3 underrated cuisines:

  1. Tunisian: Couscous, Lablab and Harissa are criminally underrated!

  2. Iranian: Ghormeh Sabzi, Fesenjoon and Tahdig are my favourite Iranian dishes.

  3. Ethiopian: Injera, the sides and those spicy sauces are really amazing!

Honourable mentions: Peruvian and Georgian cuisines. Feel free to add more.

It's also good for making at home. You can usually substitute white people ingredients for the weird jungle asian ingredients and it still turns out fine.
