My Top 3 underrated cuisines:
Tunisian: Couscous, Lablab and Harissa are criminally underrated!
Iranian: Ghormeh Sabzi, Fesenjoon and Tahdig are my favourite Iranian dishes.
Ethiopian: Injera, the sides and those spicy sauces are really amazing!
Honourable mentions: Peruvian and Georgian cuisines. Feel free to add more.

Prepare couscous with vegetable broth instead of water and after it is done add harissa. Splash of lime/lemon juice. That combo alone tastes super.
If you want to get fancy add mint leaves, pomegranate seeds & some pine nuts and you get a really tasty "salad".
