Wash rice until water is clear then soak for 20 mins.
Chop veg into a fine dice.
Place stock cube into separate pot and mix with hot water.
Place chicken in a hot pan with olive oil. Sear until brown on both sides then remove from pan into bowl.
Add diced veg and cook for 5 mins. When garlic and ginger are fragrant and browned add spices. Cook for less than 20 seconds to avoid burning.
Add back chicken and mix with spiced veg until coated.
Deglaze pan of fonde with chicken stock until all fonde has been dissolved.
Add soaked rice sans water used to soak.
Bring to a high boil and cover with pan lid for 20-30 mins.
Keep watch of pan to qvoid any burning add additional stock if necessary.
When liquid has been cooked off and chicken is cooked through along with rice remove lid and serve. Garnish rice dish with shredded spinach and sesame oil/salt/pepper.
You're supposed to add lentils as well by soaking them for 5 hours beforehand but I forget lol so I just went with rice. Rice bowls like this are really becoming a fav of mine.
