I made some pretty amazing Chili tonight

my chili recipe

1 onion (i prefer yellow or red for chili)

1 green pepper

4 cloves garlic

tomato paste

1 lb ground beef (80/20 works great)

2 28oz cans diced fire roasted tomatoes

2 cans of beans (i use kidney and black but you can use whatever you like)

1 can stout or roughly equal amount chicken stock (i prefer the beer)

couple squares of dark chocolate

chili powder, cumin, smoked paprika, cayenne (optional), oregano, garlic powder, salt, pepper

brown the beef, add some chili powder and cumin when it's near done

chop the vegetables, soften in olive oil, when they're near done add chopped garlic, a squeeze of tomato paste, chili powder, cumin, paprika, and cayenne

let that fry for a minute or so then add the beef, all the tomatoes, the beans with the bean water, the beer or chicken stock, oregano, garlic powder, pepper, and salt (go easy on the salt, adjust it later)

simmer for at least half an hour, i like to do around 1.5 hours

near the end throw in the chocolate, adjust spice levels to taste (i end up using an absolute shitload of chili powder in total), and salt to taste

eat it however you want, sometimes i eat it over cornbread

fresh jalapeno, fritos, shredded cheddar, and sour cream are the toppings i like the most

it won't win any awards but it's easy, darn good, and makes like six meals

Impressive. Normally people with such severe developmental disabilities struggle to write much more than a sentence or two. He really has exceded our expectations for the writing portion. Sadly the coherency of his writing, along with his abilities in the social skills and reading portions, are far behind his peers with similar disabilities.
