Cheesecake is great as it's the kind of dessert that can be customized to be sweet, tart, and every flavor in-between. I'll post the results of the most popular cheesecake recipes here

I used to make cheesecake while I lied in bed with my ex-girlfriend in her little apartment at college. It's hard to do it now even though years have gone by. I've found another woman and I love her, even dated her longer at this point, but it's not the same. I'll never know the passion that I felt with my first love again, and I guess I'm alright with that. Smile that it happened as they say. Christ, I need a mother fricking drink but I told myself I'd cut down and not drink until the weekend. Lord give me fricking strength. Goddarn it. I quit reading schizo alien conspiracy theories too.

My two cheesecake tips

1. If you don't like goat cheese, don't listen to recipe authors who say it doesn't make the cheesecake taste like goat cheese

2. To stop water leaking into the springform I use a crock pot liner around the pan and tighten it by gathering the excess and tying a knot

To stop water leaking into the springform

I started putting the springform in a slightly larger cake pan. I have a 9 in springform and put it in a 10 in cake pan that's 3 in tall. I was a little skeptical the cheesecake would turn out good, but it works great and so much easier than dealing with that other bullshit

I like the cheesecake my aunt makes that has the two really distinct layers with top one being really sweet, creamy, white and the inner one more sour, crumbly, yellow. I do not know the recipe. I do not care for single layer cheesecakes

I don't have one on hand, but you should make a graham cracker crust. Those are good

I almost always do. The exceptions are when im going for a fuller chocolate flavor i might use an oreo crust. Even more fun is when you can dust the cheesecake with the crust. Thats great

I've done Oreo crust as well. They're too good. I would be morbidly obese if I made those often.

I'll repost my key lime cheesecake recipe (this also works for a lemon cheesecake if you prefer):

I used this for the crust and cheesecake (almond flour and graham cracker for the crust is really good) - https://www.mybakingaddiction.com/lemon-cheesecake/

  • substituted key lime whenever it called for lemon

  • used 2 teaspoons of key lime zest

  • I did not wrap the springform pan in tinfoil to prevent leaking in the water bath because I think that method is r-slurred and doesn't work (at least for me), so I put the 9 inch springform in a slightly larger 10 inch (and 3 inches tall) cake pan in the water bath as shown in this video - 'sTestKitchen

They are more difficult to make than cookies. Listen when it says not over aerate the cheesecake as it makes it gross and crack. Being rough is bad. You also need a springform. Many recipes work best in a water bath which requires a large basin. Then theres what flavor you are going for. There are lots of combinations of dairy products that can make a good cheesecake but they heavily change the flavor. Do you know what kind you would want to make?

The more basic the better. At cheesecake factory i order the original. Seems like a lot of work for short notice but I really do fricking lvoe cheesecake so i'm gonna look into this and order the stuff
