It's not a salad it's a carb side. Rule for any meal is meat + 3. Meat main, carb side, veggie side, salad side. You can swap the carb side for another savory side, or do 2 rich veggie sides depending on cuisine. A basic example of a BBQ version is brisket+beans+cornbread+Caesar, or a healthier meal could be roast chicken + dinner rolls + seasonal green salad + roast veggies and gravy

A single 5lb bag would be heaping amounts in both pans. Tip on potatoes salad is to go heavy on addons. I fricking hate a sweet dressing, so I tend to go savory with chopped dill pickles, at least a dozen hardboiled chopped eggs for that amount, brown mustard, lots of black pepper, 2-3 chopped red onions (very fine dice) and toss in fine diced Mama lils hot peppers. Use a vinegar + mayo sauce as the base. I do it by feel, not recipe. Boil the potatoes until they crumble lightly but aren't mush.

Instead of limiting yourself to the size of a pan, you should really just get 2 large punch bowls and use those to serve. They'll hold large amounts and you won't have to think about portion size like you do with pans. Anyway ...
