The Michelin guide used to be famously biased toward French cuisine, so I wouldn't be surprised if new staff felt it needed to be decolonized. :marseyblm:

I always wondered that too. There's a Chef's Table episode about some Michelin starred place in NY. They don't shut up about how revolutionary they are because they use seasonal produce. How detached from reality can you be?

It's because nobody can actually make better food than Le Bernardin which already got all its michelin stars like 20 years ago, so they have to throw a bone to all the wannabes who can never possibly come close.
