I'm glad I had a close relationship to her, a lot of my family are pretty terrible but she was an amazing person. There's a family tale that she dressed a fresh chicken the same day she gave birth to my grandmother.
Yeah I try to keep at least the cheap bottled lemon and/or lime juice on hand but not used it in a hot minute. Vinegar didn't seem to be unusual to use as an acid, though I clearly would prefer the citrus notes next time.

I need to use lemon next time and I prefer ham / canadian bacon, but I had vinegar and bacon on hand.
I think eggs of all styles are my favorite food, but I hadn't poached one before - IDK why.
This has culminated in me making eggs benedict from scratch.
