I used too much spinach

Used a "Italian" mix of cheese, used half-n-half, used fresh cherry tomatoes, used Irish butter not olive oil, and added a splash of wine wine vinegar (lemon juice would be better.

Oh I gotcha. Yeah it was just a quick snap to share with my friends, I was pretty hungry by the time I had plated.

Yes the og recipe calls for sun-dried but this was pretty spur of the moment "we got salmon at the store, what do we make".
