Do something cool with it, like pickle it for a few days, then throw in the food coloring and then see how it looks! Like try to get the fat absorb the color, so it glows!

Can you post pics throughout the process? Also what kind of pickling process do you think about using? Will you inject the brine? Vacuum seal it?
