I'm thinking of https://en.wikipedia.org/wiki/White_onion or https://en.wikipedia.org/wiki/Vidalia_onion in particular.

Yellow onion, esp the ones at aldi, are pretty pungent and sulfur-y.

Couscous is always from a box? As in dried like pasta/rice.

You pour it into a bowl (add seasoning if you want), pour boiling water over it and wait a few minutes. Then it's done.

Now you just put in some harissa (and lemon juice) and mix it. It's just a north african chili paste. If it's precooked couscous (why tf? save yourself the money and buy dry!) just add the harissa after you warmed it up. Or mix it in cold.

Wine was "Solis Lumen Orange 2022". I was surprised how many sweet notes it had, tastes very similar to a riesling.

I get my seafood or nice meat from Whole Foods. You pay a pretty penny but it's still wayyy less and wayyy better than eating out.

If I'm being extra I'll hit the butcher, especially for smoking.

I get my shrimp and seafood at Costco because it's a better deal. To quote Jimmy Yang, look for old Asian ladies when you shop because you know you'll get a good deal. Aldi, Costco, and the Asian market for specialty ingredients. The Mexican tienda is cool too for peppers and other ingredients.

The local chain has contracts with the meat processors and has inspectors that walk the floor. They have fresh, high quality chicken breast for $2/lb. Pork chops are usually $2 each. The steaks are good too but you pay for them. I like shitty cuts, so I just get them at Costco too.

I guess I usually overlooked their fresh fish, does Costco do oysters?

I do like filets from Costco for sure, they rule if you're having a dinner party.

I have seen oysters and scallops. Not on the half shell, but that's to be expected in a landlocked state. I usually get frozen raw tail off shrimp that I throw into a lot of stuff.

Shrimp can be quite pesky to cook IME. I make a "curry" dish pretty often and I'm never quite happy with how overcooked they come out.

I wish I could tell you a good universal way to cook them, but I overcook them about 40% of the time. I'll still eat them because they're delicious. A good recipe for skewers is you make a brine of rice wine vinegar, soy sauce, ginger, garlic, sesame oil, lemon juice, chilli oil, salt and pepper. Brine the shrimp for about 20 minutes, heat a cast iron skillet to medium heat. Put about 6 shrimp per skewer, cook for 3 mins per side, serve with Jasmine rice.
