It is basically a sort of roast that you marinate in a sort of vinegar mixture for a several days (I PROMISE it does not taste vinegary).

This makes it INSANELY tender :marseychefkiss:

That + Spätzle on the side with the gravy made from the roast and Jesus Christ it's so good :marseybeandrool:
