Made some bomb-butt mapo tofu last night

Followed this guy's recipe, he has a chink wife and they know what they're doing:

I've never really done legit Chinese cooking before so I had to get a ton of the ingredients like the bean paste, Shaoxing wine, and Szechuan peppercorns.

It was really good and pretty easy, I'll definitely be making it again. I've never had Szechuan peppercorn before, they have a very distinctive and unique flavor and heat. They're not even so much hot in the traditional sense but they turn your entire mouth numb. Very unusual feeling.

For this you cut it into cubes, blanche it in boiling water for 2-3 minutes, and then add it to the pot with everything else and let it simmer for ~10 minutes.
