This guys says in what could be explained in a couple sentences:
Raiders is absolutely dripping with visual symbolism, enhanced in no small part by Douglas Slocombe's cinematography. the film is just as good if not better in black&white, it feels the same but a bit more noir and true to the time period it depicts. But black&white also enunciates a lot of the great visuals in the film, particularly shadows and silhouettes, as well as the exquisite blocking and framing Spielberg chose for every shot
As for the moral black and white, yes, duh, the Nazis want a mythical (Jewish!) religious artifact to deploy for material/war purposes without comprehending or respecting its sacred power and significance and the ending is literally God rejecting the Nazis
