As far as people in N/E Asia 3000 years ago were concerned a dragon was as real an animal as a monkey or a tiger. Why's there no year of the cat? That's a harder one to answer.

Wait I remember a folk tale I read about this! It is said that the rat and the cat used to be the best of friends until one day the emperor held a contest to determine which animals would be on the zodiac. The rat trapped the cat and went to the contest, thus securing his position. When the cat found out he was furious and that's why there's no cat on the zodiac and why rats and cats hate each other.
I think this is probably a newer tale to explain why the cat isn't on the zodiac when it seems so obvious. The zodiac is quite old so it's possible that the cat hadn't made it to China yet.

Nah this one sounds right. It reminds me of the South Park episode where dolphin and whale were framed by chicken and cow, so the Japanese hated dolphins and whales
