I just started knitting again after not doing it for a few years. I got some fun yarn for Christmas.
The first few stitches are really lousy, I forgot what I was doing and now I don't know if I should start over or keep going. What do you think? I'm trying to make a really wide scarf.

i would suggest going thin just because if you go wide it fricking takes forever.
every knit you add onto a row you're increasing the overall knits exponentially.
I also find it easier to work with when you have space on the needles and its not completely covering them like that.
It's up to you though. Wide scarfs are great but they just take a lot longer.

I haven't recently but yeah have made a few things over the years.

I have decided that I'm going to make it less wide than I did when I redo it, but I still want it to be wider than a regular size scarf.

Yeah I do too. It just makes it take a lot longer though and you can get tired of it before you finish.
But just keeping it in mind and going for a middle ground is good.
