90% of all cuisine was invented in America. I mean this unironically. The immigrants come here, they make new dishes here, then they go back home and it becomes popular. Part of it is poor immigrants used to spending 50%+ percent of their income on food and they sort of obsessed with food. When they come here they continue that habit for a generation but with much greater income and cosmopolitan ingredients because they in cities so invent many new dishes.
