Before I roast you slow cook you in a clay brick walled pit for being so wrong, what's your standard of comparison for baseline "good" BBQ?

Commercial BBQ is one of those food types where 30% is absolutely shit, 68% is passable and still tasty, but there is a clear and massive gap between passable and "great" that you can only know once you've had "great".

And I have had the supposed "good" memphis bbq, it was good, but not even in the same stratosphere as good texas bbq

I have eaten at Pinkerton's and it was mad decent, so we can at least start there.

IMO both Memphis and Carolina BBQ are super easy to f/u, but when done right you'll finally see what all the other failson pitmasters were trying to accomplish.
