How do you think Season 10+ was supposed to go? The writers have said Season 10 was rearing to go so it's already written, but I wonder what would have happened past that.
They gave team RWBY too many L's. It still feels like Cinder and Salem would just kick the shit out of them after all these years.
Also I really liked the Rusted Knight idea from Volume 9. What if Jaune was actually a badass now since he technically has decades of experience? Or what if Salem found out about the time travel fruit he found and used it to try and change her past?

Jaune shouldn't have done any time travel bs. His sword is a family ancestral blade that's been passed down for supposedly generations. I would have made it that the Crocea Mors has absorbed some essence of past generations of Arcs since strengthening weapons in RWBY is essentially forcing your SOUL into them. Having generations of warriors pour their soul into a weapon would surely do SOMETHING to it, something downright magical.
For Salem I would have just copies the Tiamat myth from Enuma Elish. She's a primordial entity of creation gone made when her own creation (((Ozma))) scorns her love and births monsters. Ruby gets WOKE and scatter her body to never again threaten them.
In the EnΓ»ma Elish, the Babylonian epic of creation, Tiamat bears the first generation of deities; her husband, Abzu, correctly assuming that they are planning to kill him and usurp his throne, later makes war upon them and is killed. Enraged, she also wars upon her husband's murderers, bringing forth multitudes of monsters as offspring. She is then slain by Enki's son, the storm-god Marduk, but not before she brings forth the monsters of the Mesopotamian pantheon, including the first dragons, whose bodies she fills with "poison instead of blood". Marduk then integrates elements of her body into the heavens and the earth.

What I really liked about Rusted Knight is that it made Jaune seem vaguely badass plus it's Jaune of all people who became a renowned fairy tale hero. Course Rusted Knight never got to be out and about in Remnant.

Adapting more fairy tale stuff could have cool. Raven and her bandit tribes could have been a Wild Hunt stand in. Teleporting bandits and barbarians hunting their fellow man as sport, embracing the despair all around them.

I never clicked with Attack on Titan
I would have liked a character arc for Ruby where the stress of the plot eventually erodes her r-slurred cheeriness and forces her to grow more serious. Nonetheless she would retain her overall optimism and hope for the world. She would be at peace with herself and confident when finally facing Cinder, which would be a good contrast to Cinder's growing instability even as she acquired more of the power she always wanted.
Also I wonder how things would end between Cinder and Salem, since I doubt the former would want to be a pawn forever. I always predicted Cinder would outlast Salem and the final climax would be Ruby confronting her once and for all.
With the Grimm Hound having once been a silver eyed warrior, I wonder if the same thing happened to Summer.
