Only some very rare variants of chorizo are made of blood. Usual chorizo is not.

:marseywould#: it tastes great. Tongue in general tastes great, but is rarely sold. But an old cookbook I have from the 70s uses it a ton. Texture wise it's similar to cooked ham.
