You probably don't want to get the whole dish in frame, in many cases. People are going to be looking at it on their phones, so in most cases it's probably better to film closer-up so people can actually see what the food looks like, instead of just seeing the general outline of the dish

I don't think food science shit is my thing but I haven't tried it. Is something like this restaurant worth it or is it just overpriced fancy shit for the sake of being fancy
Depends on the restaurant. Some are pretentious bullshit where you eat fudge out of a mold of the chef's butthole, followed by 17 courses of various foams with a single grape to cap things off ($800 pp) and others are just really good food with flawless presentation and service. Still overpriced but the food is worth it if you have money to burn.
Atelier Crenn is a good example of the former and The French Laundry is a good example of the latter.
I had this experience at Pasta Bar in Austin. Really top-notch food, but I ordered the wine pairing with it and received 11 glasses of wine with my dinner + a free cocktail both before and after eating. I appreciate the multi-course experience, but I ate so much food and got so drunk it was making me sick. It's like those stories of ancient rome where they'd all go vomit and then keep eating again.

You weren't kidding, it's terrible.
She couldn't even get the whole dish in frame?! And the editing sucks, I know wine moms who could do a better job.

yeah, or at least stabilize in post. she already doesn't need her food to be fully in frame, so just cut the edges

ANYTHING
I can see what she was going for but the execution was entirely amateur.
Steadycam or gyro stabilizers are like $200 and anyone seriously into dynamic photography like that has one

nothing is overpriced. it's an experience that you cannot sell on, e.g. like art, so no
