Speaking as a nonsportscel, why does someone hypothetically care enough to get dramatic over this? What does it matter if these teams are in this conference versus that conference?

In D1 sports there are what's known as the Power 5 conferences. Basically the top 5 best conferences overall in sports. If Texas and Oklahoma leave the Big12, there's a very high chance the conference just collapses in on itself.
