The real trick is to maximize airflow and high heat. If you only have a regular oven, heat them a bit low and slow and then pop them into a hot skillet with fat (unless the fries have plenty) to crisp them up. It's not nearly as easy or simple as using convection or a fryer (I use a Dutch oven) but it doesn't require any extra equipment.

I tend to double fry fresh fries. So using frozen skips the cutting and first fry and cool. Also many restaurants use once fried frozen fries and fry them again and it turns out great.

i dont really mind it, it looks nice. the place where i was staying on vacation had butcher block counters which was so insane. i dont know why someone would do that next to the sink.
