At the risk of sounding even more basic, when sriracha was out of stock I tried Tapatio, Tabasco, some other Mexican-ish brand, Crystal, Mike's Red Hot, and maybe a couple others. And I still go back to sriracha. Mostly because I'd rather have it be sweet than sour. If I want sour I can just sprinkle some vinegar.

Marie Sharp's Belizean Heat is insanely good, it's actually hot + doesn't taste like pure butt which is kinda rare. Mad Dog 357 is also really good but literally a single drop mixed up in whatever you're cooking is all you need imo.
