Made a penne with Alla vodka sauce but swaped vodka for rum and added some habenrio peppers to complement the sweetness of the rum

That looks absolutely delicious. Penne a la vodka is one of my favorites, but this sounds like an interesting substitution

My logic is that vodka is the worst spirit because it's just water and ethanol so might as well use anything else. Gin would probably be better for this because it's just vodka with infused flavors.

I think the alcohol adds balance and works as a flavor enhancer, similar to salt or MSG
