Drying out the rice helps a lot, you don't have to do it but you'll be happy you did. If you use old rice, it'll already be kind of dry, but then you can spread it out on something flat like a cookie sheet or a piece of foil and leave it uncovered in the fridge and it'll get really dry. It'll keep it from being a soggy pile of crap when you're cooking it.
Yes. Skirt steak in butter plus white rice made in an electric cooker plus soy/terriaki. EZ 9/10 meal. The steak juices season the rice more than you’d expect. I don’t think I’ve ever had chicken rice that exceeded 6 or 7/10. Poultrycels be seething.
