Looks tasty. If you want a change of pace from the horseradish angle, try carmelized red onions/onion jam as a foil for the 'peños spice.

Not everyone likes something that sweet on their burger/melt, but I think the flavors set it off something nice. Might also want a more flavor-neutral bread for that tho, so the cheese and sweet don't get in a fight.

That actually sounds really good, I'll give it a shot. Sweet goes well with a savory burger. You just reminded me that I tried blueberry ketchup on a bison burger once and it was surprisingly good

Blueberry ketchup sounds interesting.

On the surface it sounds like the sweetness of the berry flavor would overpower everything else, but I'm guessing that's (hopefully) not the case?
