Looks tasty. If you want a change of pace from the horseradish angle, try carmelized red onions/onion jam as a foil for the 'peños spice.

Not everyone likes something that sweet on their burger/melt, but I think the flavors set it off something nice. Might also want a more flavor-neutral bread for that tho, so the cheese and sweet don't get in a fight.

That actually sounds really good, I'll give it a shot. Sweet goes well with a savory burger. You just reminded me that I tried blueberry ketchup on a bison burger once and it was surprisingly good

The premium cuts are marbled, the rest is ground and sold at a slight premium. It tastes much better than normal ground beef.

Im sorry what is the fúcking point of wagyu if it is ground? Literally any store bought ground meat can be any amount of fat content you ask for. You want a 30/70 lean to fat ratio in ground? They can do that, it’ll render because… it’s mostly fat

My favorite steak I ever had was wagyu for a birthday present, so a general cut makes sense, but why in heaven’s name would you grind it since grinding introduces rhe ability to add any portion of fat you want to even lean beef?

Not be a kill joy but “wagyu” makes 0 difference if you’re grinding it. The main factor that affects taste and texture is the fat %.
