i just got gifted a sous vide thing!!!! so excited, do you think it would be good for hainanese chicken? you mentioned that the ideal boiling temp/time was hard for the texture to be right, wondering if this would help

Yeh it was common for Chinese immigrants to take over fish and chip shops, so they developed variations of Chinese food that could be made in those kitchens.

hmm the saltiness tastes different IMO and the methods of cooking are different so the texture of the meat isn't the same too
for example the salted baked chicken on the left resembles the soy sauce chicken on the right but they have very distinctive tastes and textures

I strongly doubt 鹽焗雞 has only salt to it's taste since it has sand ginger, one of the best thing that could happen to a chicken.
