i just got gifted a sous vide thing!!!! so excited, do you think it would be good for hainanese chicken? you mentioned that the ideal boiling temp/time was hard for the texture to be right, wondering if this would help
nice!!! i think it's worth a try! the sous vide thing was pushed here for a while but never took off so i've not really tried much food cooked that way
Yeh it was common for Chinese immigrants to take over fish and chip shops, so they developed variations of Chinese food that could be made in those kitchens.
That's how you end up with things like the munchie box

Oh I just meant if you had a 'place' for it in SG... Apparently there's like 4000 different little vendors of it there and people are meant to have favorites

Do you have salt and chili chicken in Singapore? It's taken over UK Chinese restaurants.

Do British people not usually put salt on their food? I'm confused why salt would be something to draw attention to in the name of a dish.

The dish uses a lot of salt and doesn't have many ingredients. It's a bit like cacio e pepe for naming.

If it's supposed to be salty wouldn't soy sauce be a better alternative? Plain salt is basically nothing but the saltiness.

hmm the saltiness tastes different IMO and the methods of cooking are different so the texture of the meat isn't the same too
for example the salted baked chicken on the left resembles the soy sauce chicken on the right but they have very distinctive tastes and textures

I strongly doubt 鹽焗雞 has only salt to it's taste since it has sand ginger, one of the best thing that could happen to a chicken.

Is that salted egg chicken? If not I've not seen salt and Chili here yet
Jump in the discussion.
No email address required.
There's no egg (aside from maybe the chicken batter). It's battered chicken dry fried with spring onions, chili peppers, bell peppers and salt.

I can picture it in a Chinese menu but I think people here like sweet and sour chicken or prawn paste chicken when it comes to fried Chinese chicken
Your dish sound delicious and not too heavy
Try salted egg chicken if you can find it! It's very nice even though the name of the dish can be off putting

Thanks I'll look out for it, it doesn't look too different.
And yeh it's not too heavy, although you normally have it with salt and chili chips...

if you don't mind the heat of a hawker center then maybe Tian Tian: https://guide.michelin.com/sg/en/singapore-region/singapore/restaurant/tian-tian-hainanese-chicken-rice
if you want a posh place then Chatterbox: https://chatterbox.com.sg
honestly it's difficult to pick a favourite since majority of the vendors are very good at making it
