I have heard about this true, I am unfortunately an Ontario-cel and while I do enjoy being relevant I'd also like to try the Maritime style stuffing too.

Honestly, I can't recommend Summer Savory enough with turkey (or any poultry), and it flabbergasts me why it isn't more popular elsewhere in North America. It isn't even easy to find in some parts of Western Canada, so I regularly ship pouches of it out to displaced friends and family.
In Italy in particular they use Summer Savory a lot with pork, and I can confirm that it goes very well. There's a traditional pork blood sausage from Nova Scotia called "Lunenburg Pudding" which uses Summer Savory, and it is da bomb.
And no, I'm not getting paid by "Big Summer Savory" to say all this...
