In all honesty gas stoves are dangerous and not really worth the effort. At the same time not worth regulating, when you have micro plastics being exposed to everyone and teflon too. Deal with the biggest issue first: Plastic and other forever chemicals. Then deal with gas stoves.

Not using a flame turns your control of heat into 2D. With a flame you have movement of the Y-axis for granular control of temperature, location, and rate of heat distribution.
Also for induction pans the bottoms must be flat. I cook very aggressively and cbf to keep my pans at a perfect 0° degrees parallel to the stove.
Flame is the way to go because it's in every single conceivable way superior.
