Red Curry Beef Stir Fry

Just a regular old beef stir fry, but this one has lionsmane mushrooms in it too, which are easier to see in the second picture:

Stir fry is as usual, but the sauce is:

  • 1/2 cup water
  • 3 tbsp red curry paste
  • 2 tbsp peanut butter
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp shaoxing wine
  • 1 tbsp cornstarch
  • 1 tbsp sugar
  • lime juice
  • ginger
  • Stir fry stuff was flank steak, lionsmanes, bell peppers, garlic, and scallions.

    Could you make it "saucier" by adding more of the liquids? Not like a curry, but I like the rice to have something to soak up.

    Yeah, you can just expand the sauce. Having more sauce won't have any negative effect on a stir fry because you don't add it until the end anyway.

    Lionsmanes are really cool. They look like this when you cut them:

    They used to only be available from weird mushroom dudes who are into mushrooms but not psychedelic ones, a rare breed indeed, but now they're mainstream enough that I got them at whole foods. If you slice them as pictured, they work really well in a stir fry.
