Roasted cauliflower + bell pepper soup
I usually add some smoked pepper and ras el hanout then just pop the vegetables + garlic into the oven with some olive oil. Blend it, add some water or vegetable stock and bit of tomato paste. Can add cream if you're a fatty
Second favorite is Goulash soup
but I don't feel like typing out the recipe.
