Unable to load image

Buying new smoker/grill, need recipes for Thanksgiving.

So I'm getting a new 4ft smoker that will be ready by Thanksgiving. It's one of those models that can be converted into a grill as well, though obviously not both at once.

I've already decided on a brisket, but that'll only use about half the space. Anyone got ideas for other stuff to smoke with the brisket?

Sweet gamebird:

Get some whole quail, grouse, or pheasant (or Cornish Game Hen if you don't hunt). Cover the outside with maple and brown sugar-based dry rub of choice. Get a bunch of grapes, slice them into quarters, dice a sweet onion and mince some garlic. Stuff the quail with this, and then every fifteen minutes while cooking squirt some sherry into the quail with a baster to make certain it doesn't dry out.

Gotta confess never tried this in a smoker. Only on a grill or in an oven, but it's always a hit. I assume for smokers the bird getting too dry is a concern.
