You should definitely read the book first. The first movie is alright, but they get progressively worse and start adding shit that has nothing to do with the book. The last one is genuinely unwatchable.
"The Hobbit" (book) really is a kid's book. With the success of the LOTR movies, the studios naturally wanted a follow-up licence to print money. The easiest available Tolkien work to adapt to movies was "The Hobbit". If they'd stuck to one film, it would have been okay. But they wanted a trilogy for the same reasons as LOTR (three times the money) and so that meant sticking in a ton of filler, original characters, stupid plot twists, etc.
Watch the original LOTR movies. Only watch the first Hobbit movie (the best one since it's got the most book content) if you want another Tolkien fix. Avoid Rings of Power at all costs, because that makes the Hobbit trilogy look like high-fidelity high art.
