Sleep. I'd focus on protecting travelers sleeping on the road and ensuring people got the rest they needed. I'd also defend against nightmares. My sacred animal would be the bear prob and my sacred plant would be chamomile.
I'd be a minor god who answered to Mors. (Since death and sleep are thematically related in some ways)
