You are correct. That said it's a time and convenience thing. It would be cheaper to buy a big piece of ham and slice it myself, but paying a dollar or two premium to have someone else do it and package it for me.

Guy in the linked thread claims to have breadmaking as a hobby; making all breads from flour water must save him money, but the final ingredient in this is free time. I don't mind cooking huge batches but it is a chore to me
