I used to have a neighbor that would only "eat" milk. Dude would buy 10 gallons of milk at a time and when the milk expired he would just boil it and then drink the expired boiled milk.

that's called making cheese and it's a valid use, I've considered doing that since you just need a large pot and lemons.
It's actually safe too, since you can tell when milk is bad, expiration dates are only two week estimates but it doesn't go bad when it hits that date. Milk is bad once ANY chunks or slosh forms, then throw it out. But if it hits the date then it's still good for like 3-5 days, plenty of time to make a cheap cheese

Neighbor I know what farmer's cheese is and I know for a fact you don't use milk that 6 months past it's expiration date that's also been sitting outside a fridge for those 6 months to make farmer's cheese with.
