Thanks, it already smells so good. I think I'll finish with about 12 gallons. Apple and pear season are right around the corner too, and my freezer is full right now of fruits and berries that will all get fermented. I think I can do 50 gallons by the end of the year.

Is there much risk to it or is it too automated to explode? I know nothing about these things

There's almost no risk. As long as the blow-off tube remains unblocked it'll keep chugging along.

Honeycrisp is a great variety. A lot of single variety ciders can have kind of a boring flavor profile once they're fermented but the honeycrisp and mcintosh both make really great ciders.
