Dark souls has a target audience just like any other game and any given game isn't going to be able to cater to exactly everyone. Even the games with a variety of difficultly options, because that game even with difficulty options may just not be their thing. There not that difficult and the difficulty which exists serves the artistic aesthetic of the game, timing down the difficulty which remove the oppressive feeling of being in a hostile and brutal world. Not everything is for you.

I can see why fans of the Darkest Dungeon wouldn't like how short the second game's campaigns are, but the idea of failing a campaign after 20+ hours of progress is brutal. I'd end one gaming session thinking, "This is a stable run," and then play again the next day and everything goes to shit.

That should be enough. These games also DO have an easy mode: summoning. Elden Ring even allows summoning of npcs that actually are better than other players in many situations.
Are these people saying that they want to be able to beat these games without summoning or are they so bad that they still can't win with summons? Either way, it's not the game for them.
