What's wrong with Fabric? I'm not opposed to Forge, but Fabric seemed like the more compatible option, since there seem to be more (recent) Fabric-only mods than Forge-only. I could try Sinytra Connector, but it doesn't always work.
I guess I shouldn't have mentioned it, since ultimately it's a matter of which mods people want.

depends on what you want the feel. Use any performance stuff and figure out a way for people to login using cracked accounts so nobody doxes their usernames / name history

The big cave updates started in 1.17, so 1.16.5 would be a good middle ground. I just wanted a more recent version to try out the new stuff + some cool-looking mods like BetterNether and BetterEnd.

I like finding a giant mountain, digging down and making my own areas. It completely ruins the fun when you have to deal with a new, mostly irrelevant cave system every 20 blocks. Also the newer versions added a bunch of shitty ground blocks that add basically no value just take up more inventory spaces and look weird

Keep in mind the newer versions run way worse, even with the fact they use newer versions of java. One of the reasons 2b2t was/is on an older version for so long.
