The big cave updates started in 1.17, so 1.16.5 would be a good middle ground. I just wanted a more recent version to try out the new stuff + some cool-looking mods like BetterNether and BetterEnd.
I like finding a giant mountain, digging down and making my own areas. It completely ruins the fun when you have to deal with a new, mostly irrelevant cave system every 20 blocks. Also the newer versions added a bunch of shitty ground blocks that add basically no value just take up more inventory spaces and look weird

Keep in mind the newer versions run way worse, even with the fact they use newer versions of java. One of the reasons 2b2t was/is on an older version for so long.
