Sorry bud I just saw this. I hate groundhogs. I've never eaten one but the people I know who have say to bake it like a roast with taters and carrots. It's supposedly really greasy too. Btw groundhog leather is one of the toughest and strongest leathers in the world.
I was going to roast it but that's boring. I cut it into thin slices and marinated the same way I marinate flank steak for fajitas. Might make fajitas or kebabs, not sure yet.
This one was extremely greasy. I couldn't get a good grip when I was breaking him down. He had the most fat I've seen on any wild animal. Must have been the corn gluten.
I was going to save the hide, but I was skinning him as the sun was going down so I rushed and put a few holes in it. Oh well
