I wrote over 50 fake story posts on subs like TIFU and MaliciousCompliance, should I include these on my portfolio?

No really drama but I get an LOL at freelancewriters crying about not making any money. Then some gems turn up and thought this is funny since it's likely one of these stories got posted to rdrama. He wrote some on AITA too.

Whats stopping freelance writers from pooping out trashbooks and publishing them on Amazon and then paying a botfarm to give them a 4.4 star rating?

This actually did happen. Chinese were creating AI books and then botting views. Amazon apparently plugged the vulnerability, if you can call it that.

There is a Chinese publisher named HowExpert. He pays broke freelance writers $100 to shit out ebooks and spams Amazon. I just looked him up and he does ok. He must make money because he's known in freelance writers circles as a pain in the butt who contacts you with $100 budget but he finds people to do it.
