It's rumored she can't stand by herself anymore. She is always sitting down now or leaning on someone in press conferences. There are videos of her having muscle spasms. I'm sure she's very weak, she doesn't have hardly any bodyfat.

Lot's of reasons. Usually it's about control. You may not have control over everything else going wrong in your life, but you can control your food. I'm sure for Ari part of the reason this happened is because of the bad press she was getting for breaking up a marriage. Now instead of talking about that, we're talking about how sick and helpless she looks.
Another thing to note is that sometimes starving feels nice. You feel legit high and weirdly "good". Of course that feeling doesn't last long term and you will feel like crap after a while.
